Apple Pie

There is a lot of recipes for Apple Pie, but this one is the best one. Easy no-fail, buttery, perfect consistency of a shortcrust will melt in your month, and a filling - mix of apples, spices and vanilla. Taste of this Apple Pie you won't forget.
Ingredients :
Shortcrust:
300 g all-purpose flour
200 g butter
100 g icing sugar
2 egg yolks
1 egg
1 tsp of baking powder
Meringue:
2 egg whites
50 g sugar
Apple filing:
2-2,5 kg of apple
sugar
juice from half of the lemon
cinnamon
ginger
cardamon
Method:
Shortcrust:
To the mixer bowl put cold, cut into pieces butter. Add icing sugar, flour and baking powder. Mix everything until those ingredients become similar to sand. Separate egg whites from egg yolks. Add 2 egg yolks and one whole egg and mix until everything combine. When your shortcrust pastry is ready, divide it in 2. Cover with climbing foil and put in the fridge for the time when you gonna prepare apple filing.
Apple filing:
Peel apples and cut them into big cubes. Add sugar, lemon juice and other spices. Boil apples on medium feat until they become soft but their structure stayed the some. Try apples during cooking and add more sugar or spices if needed. Leave it on a side.
Line cake form with baking paper. Take out first part of shortcrust from fridge and roll it to match the base of your cake form. Heat up the oven to 175 degrees. Pour your apple filling into your base.
To make meringue : Whisk egg whites and sugar until stiff peaks form.
Spread your meringue on top of the apple. Cover your pie with second part of shortcrust. Bake for an hour.
Once apple pie is ready cool it down. You can decorate with icing sugar on the top.
Advice:
If after 40 minutes top of your pie is burning cover it with a foil.
