Gingerbread Cookies

Whenever I think of Christmas, Gingerbread cookies come first to my mind.

With another perfect idea for Christmas baking, those quick and easy Gingerbread Cookies will put you in great Christmas mood and smell of them will spread a joy in your house.

They are that sign of the year when you are getting closer with your family, friends and neighbours.

Ingredients:

90 g honey

110 g brown sugar

80 g butter

1 egg

340 g flour

1 tsp baking soda

2 tbs gingerbread spices

1 tsp cocoa powder

Method:

Heat up butter, sugar and honey in the pot until butter and sugar melts. Leave it on a side to cool down.

Meanwhile in bowl mix flour with baking soda, gingerbread spices and cocoa powder. Cocoa powder will make your cookies darker.

Add one egg.

Mix everything together. Gradually add cooled butter mass. You can mix it with mixer or by your hands.

Ones your dough is ready, dust your counter with bit of flour. Use rolling pin to make your dough the same thickness.

Heat up the oven to 170 degrees.

Cut out favourite shapes of your cookies. (Involve your kids, they will love it)

If you want to use your Gingerbread cookies as a Christmas Tree decoration you can make a small hole on the edge of the cookie with a straw.

Depends on size, you can make up to 40 cookies with this recipe.

Bake for 8-10 minutes.

You can decorated them with icing sugar. It would be good to make them some time before Christmas and store them in plastic airtight container, so they can soften.
