Gingerbread Cake with Plum Marmalade and Chocolate Ganache

It's finally this time of the year!! Time for Christmas cake recipes. First one is traditional Gingerbread Cake with Plum Marmalade and Chocolate Ganache.
This cake will bring joy to you and your family. Perfect for all generations with extra creamy toppings.
Ingredients:
4 large eggs
25 g of gingerbread spices (one package)
150 g of dark chocolate 64-70%
50 g of plum marmalade
150 g butter
70 g dark sugar
120 g honey
180 g flour
20 g potato flour (corn starch)
1,5 tsp baking powder
2 stars anise
Filling:
300 g plum marmalade or any marmalade of your choice
Chocolate Ganache:
100 g dark chocolate
100 g heavy cream
30 g butter
Method:
Put butter, 2 stars anise and gingerbread spices into saucepan. Heat up on small fire for around 5-7 minutes mixing often. Add honey. Take the anise stars out and add dark chocolate. Mix until chocolate melts. Add plum marmalade and leave it to coll down.
In mixing bowl put eggs and sugar. Mix on high speed with mixer for 10-15 minutes until eggs become white.
Heat up oven to 160 degrees.
Sieve both flours and baking powder together. Add gradually flours and mix on low speed of your mixer and afterwards add cooled down chocolate mass. Continue to mix slowly.
Line cake form with baking paper. Pour batter into it.
Bake for 35-40 minutes.
Chocolate Ganache:
Heat up heavy cream.
Add dark chocolate and mix until totally melts.
Add butter.
Mix until smooth.
When cake cools down, cut into half add marmalade of your choice. Pour chocolate ganache on top of it and spread equally. You can decorate with crushed nuts or cinnamon sticks .
Advice:
If you want your cake taste even better, store the cake into the fridge overnight.
